Bend the tip of the fillet blade against your thumb and it moves. Do the same to the straight boning knife and nothing happens. That is why there are three knives here and not one, because a blade that follows a rib cage is the wrong blade for leaning on a joint. All three are Damascus over a high carbon core with olive wood handles, in a leather roll that ties shut.

The steel
Damascus is layers of steel welded into a single bar. Twist comes from heating that bar and winding it along its own length, so the layers wrap instead of running flat, and the etch brings them up as bands leaning across the blade. The pattern is decoration. The high carbon core under it takes the edge and holds it through a morning of fish. Carbon steel goes grey with use, and it spots if it is left wet, which matters more here than most, since this is wet work by definition.
The handles
Olive wood is oily by nature and dense with it, so it polishes up without a finish on top and wet hands do not turn it slick. Each handle is full tang, with brass pins through the slabs, so there is no glued scale to lift after a year near a sink. Grain is the awkward part of a set, since olive runs pale in one board and dark in the next. The three here are cut from stock chosen together.
The knife roll
Vegetable tanned leather, hand stitched, one pocket for each of the three knives so nothing lies edge against edge. The face is stamped in a basket weave, struck into damp hide a tool at a time. A strap wraps twice around the outside and ties. An 8 inch fillet blade does not sit in a block unless the block was bought for it, and it finds the back of your hand in a drawer. A roll goes flat in a bag and travels.

Every set is different
Every blade is forged and etched by hand in small runs. A twist tightens where the bar was hottest and opens where it cooled, so the banding leans at its own angle on each blade. Olive wood does as it likes too. Yours will be close to the photograph, not a copy of it.
Looking after it
Hand wash them and dry them straight away, more so after fish. A light coat of food safe mineral oil before they go back in the roll keeps rust off, and the roll wants to be dry when they go in, since leather holds damp against steel. Questions buyers ask
What separates a fillet knife from a boning knife? Flex. A fillet blade is thin and long so it bends along a rib cage. A boning blade is stiffer and pushes where you point it.
Why two boning knives? The curved one arcs up and works around a joint. The straight one is shorter and stiffer for close work. One shape doing both gives up something.
Will they rust? They can. Carbon steel sits under the pattern. Dry them after use and keep a film of oil on them.
