What is in the set

The steel

The blades are Damascus, pattern welded over a high carbon core, and the pattern here is ladder. Ladder reads as straight bands running across the blade like rungs. The etch is done after grinding, so the bands carry over the flat and down through the bevel to the edge rather than stopping where the grind starts. Under the pattern it is carbon steel, so it takes a keen edge and comes back on a stone quickly, and it darkens with use and rusts if a knife is put away wet.

The handles

The scales are polished camel bone, a creamy white with fine natural veining. Bone has been used for table cutlery for years. It is dense, it takes a polish, and it stays smooth and cool in the hand. Brass pins run through into the steel, and the tang is full, so the steel carries the whole length of the handle and shows all round the bone. Every knife has the same handle, though the veining shifts from piece to piece.

The knife roll

The roll is vegetable tanned leather, cut as one long panel with stitched pockets across it, one pocket per knife. Each blade sits in its own pocket so the knives do not rub against each other. Roll the panel up, wrap the leather strap around it and tie it, and the set stores as one bundle. The outward face is hand carved with an acanthus scroll inside a beaded border, cut and shaded with a swivel knife rather than stamped, so the scroll work varies from one roll to the next.

Who it suits

This one is bought as a present far more often than it is bought for a kitchen shelf, usually with a name, a date or a pair of initials going on the blades. It also works well as a plain set for anyone who wants their own table knives to be a step better than the ones that came with the flatware.

Every piece is different

Each blade is forged, ground, heat treated and sharpened by hand, so runs stay small and no two finish alike. The ladder bands, the bone veining and the carving will not match the photographs exactly. Yours will be its own set.

Looking after it

Hand wash each knife in warm water and dry it straight away. Never leave one in the sink or put one in a dishwasher. Damascus darkens with use, and that gray patina is normal and protects the steel. Give them a light coat of food safe mineral oil before they go in the roll, and sharpen on a stone following the bevel. More is on our knife care and sharpening page.
