A gut hook skinner is built for the work after the shot. The sharpened hook in the spine opens hide in one pull without driving the point into the gut, and the broad belly does the skinning. This one is D2 tool steel in a gray stonewashed finish, full tang through an olive wood handle, with jimping filed into the spine so a wet thumb has grip. A hand stitched leather sheath comes with it.

The blade
D2 holds an edge longer than any steel we run, which is why it ends up on skinners. Hide, hair and the odd scrape of bone dull a blade fast, and D2 keeps cutting through a whole animal where a softer steel starts to slide. It is semi stainless and high in chromium, so it shrugs off blood and damp better than plain carbon steel. The honest trade comes at the stone. Once a D2 edge goes, it takes patience to bring it back. The stonewashed finish hides the scratches field work leaves.
The handle
Olive wood is dense and slightly oily, so it stays warm and does not go slick when wet. The grain here runs in strong waves of honey and brown, and shallow finger grooves put your hand in the same spot every time. Steel pins hold the scales, and a lanyard hole at the butt takes a cord. There is no guard, so the blade sits close to the hide. No two olive wood handles match, because the tree decides the figure.
Who it suits
This is a working knife for people who process what they take home. The hook is the reason to buy it and the D2 is the reason it keeps going all day.

Every piece is different
Every knife here is forged, ground and finished by hand, so runs stay small and no two are alike. The grain, the color of the wood and the look of the stonewashed finish will vary from the photographs. Yours will be its own piece.
Looking after it
Wash it by hand and dry it right away. Never the dishwasher, never left soaking, since dishwasher damage voids the warranty. D2 is semi stainless rather than stainless, so a wipe and a light coat of oil before storage pays off. Store it dry, and let the leather dry away from heat. Use a whetstone at roughly 20 degrees per side, then strop. No pull through sharpeners. More in our knife care and sharpening page.
Put a name on it
Laser engraving is 20 dollars per blade, added on this page. Around 30 characters fits on a blade, and longer messages sit better on the sheath. We send a proof image before the laser runs, and it adds 3 to 5 business days. Clean line art engraves well, photographs do not. Free on orders of 10 pieces or more. See the engraving page.
Questions buyers ask
What is the gut hook for? It opens hide in one pull with the point kept clear of the gut. The belly then does the skinning.
How do I sharpen the hook? The inside curve wants a round or tapered rod, not a flat stone. Or send it to us, since sharpening is free for life and you pay the shipping.
Does the olive wood need care? Very little. Keep it out of the dishwasher and away from long soaks. A rub of oil now and then keeps the grain rich.
Will this steel rust? D2 resists it well but is not fully stainless. Dry it after use and oil it before storage and you will not see a spot.
Will my knife look exactly like the photo? No. The shape and the steel are the same, but grain and finish vary on every piece.
How long until it ships and can I return it? Most US orders arrive in 5 to 7 business days with USPS, free over 99 dollars. Returns run 30 days, unused and unsharpened, in original packaging.
If the hook is not what you need, the Damascus skinning knife with a bone handle does the same job with a plain belly, and the bird and trout knife in Damascus and olive wood handles birds and fish. More sits in skinner knives, this steel runs through D2 tool steel, and the wood carries on in olive wood handle knives.
