There is no pattern on these. Five knives in 1095 high carbon with walnut handles, left dark along the spine from the fire and ground bright at the bevel. What you get is the grinding and the heat treat, with nothing spent on the surface. Some buyers want layers in the steel. This set is for the ones who would rather have the edge.

The steel

1095 is plain high carbon steel and it is honest about what it is. It sharpens easily, comes back under a stone quickly, and holds an edge as long as you look after it. The spine keeps the dark skin it came out of the fire with. The bevel is ground bright, so there is a clear line down each blade where the two meet, and that line is different on all five. Carbon steel darkens to a grey patina in use, and it will spot if it is left wet.

The handles

Walnut is mid brown with a straight open grain, and it warms up rather than darkening the way rosewood does. It is kind to hold for an hour. Each handle sits on a full tang, so the steel runs the full outline and shows top and bottom, with brass pins through the slabs. Five handles cut from one board is the only way a set looks like a set, and that is how these are cut. Nothing is glued on to lift.

The knife roll

Vegetable tanned leather, hand stitched, a pocket per knife, so nothing rides against a neighbouring edge. The basket weave on the face is beaten into damp hide, one stamp at a time until it covers. Two turns of the strap and a tie hold the whole thing shut. A block takes up counter you want back, and a drawer of loose blades takes a toll on your knuckles. A roll stores flat and travels, and the leather firms up and darkens as it is handled.

Every set is different

Every blade is forged and ground by hand. The line where the dark spine meets the bright bevel is drawn by the grinder and sits differently on each of the five. Walnut runs pale in one part of a board and browner in the next. Yours will not be a copy of the photograph.

Looking after it

Hand wash them and dry them straight away, since bare carbon steel gives you no second chance in a sink. A thin film of food safe mineral oil before they go back in the roll keeps rust away. Cut on wood or plastic, and keep them off glass. Sharpen on a stone and strop after, and a plain bevel makes that a short job. The rest of it is on our care and sharpening page.

Questions buyers ask

Why no Damascus pattern? Because a pattern is welded and etched for the look of it. Leave it off and those hours go into the grinding instead.

Does plain steel cut differently? A patterned blade has a carbon core doing the cutting anyway. This one is that core with nothing over it.

Will they rust? Yes, if you let them. 1095 goes grey with use and spots if put away wet. Dry them and oil them.

What is the charge for engraving? A flat 35 dollars for the set, taking in all five blades. It happens only if you ask for it.

How long does shipping take? Most US orders arrive in 5 to 7 business days.

Can I sharpen the bread knife? Not on a flat stone. Send it back and we sharpen it, free for life.
